Ingredients:
2 tablespoons olive oil
1 small onion, diced
1 leek, diced
8 stalks celery, chopped
3 garlic, minced
4 cups water
2 tablespoons tomato paste
1 teaspoon Himalaya Pink Salt
Celery Seeds (optional)
Steps :
1- In a large soup pot heat the oil over medium heat.2- Add onion, leek, and celery. Satué for 10 minutes.3- Add garlic stirring for 1 minute.4- Stir the tomato paste.5- Add the water. Bring to a boil. Cover and simmer for 20 minutes.6- Use an immersion blender to blend the soup as cream as you wish.7- Topped with celery seeds. Serve hot or at room temperature.- Did you try it?
